Watermelon Bruschetta 

Ingredients:

  • 2½ cups of fresh seedless watermelon, chopped
  • 1 cup balsamic vinegar
  • 2 tablespoons honey
  • 1 cup feta cheese crumbles
  • ¼ cup part skim ricotta cheese
  • 3 tablespoons fresh basil, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 baguette (or other quality loaf of bread) cut into ~1½" thick slices
  • Freshly cracked black pepper, to taste
